Sorrel Sauce
We got a sorrel plant at our spring neighborhood plant exchange. A neighbor suggested sorrel sauce for fresh caught red salmon and it was a hit.
This sauce is great with grilled salmon. It is also used in our Pecan Crusted Salmon with Sorrel Sauce
Sorrel Sauce
Servings: 4 people
Ingredients
- 1/2 cup fresh sorrel
- 2 tablespoons dry white wine
- 1 tablespoon minced shallots
- 1 cup whipping cream
- 2 teaspoons lemon juice
- salt and pepper to taste
Instructions
- Heat wine in a small heavy saucepan over medium heat.
- Add shallots and stir for a minute or two, then add sorrel and stir until the sorrel wilts.
- Add cream and lime juice, raise to a boil.
- Reduce to a high simmer, then simmer until the liquid is reduced to sauce consistency, about 15 or 20 minutes.
- Transfer sauce to a small blender and puree until roughly smooth. You can use an immersion blender for this step.
