Smoked Salmon Pasta
When the fishing is good, we often smoke our salmon. This recipe makes a nice pasta dish with the smoked salmon. You can also use leftover cooked salmon instead.
Smoked Salmon Pasta
Ingredients
- 16 oz penne pasta
- 6 tablespoons butter
- 1/2 cup onion -finely chopped
- 1 clove garlic - minced
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1/2 cup parmigiano-Reggiano cheese - grated
- 1 15 oz can peas - drained
- 1 small can mushrooms -drained
- 10 oz smoked Salmon - cooked leftovers OK too
Instructions
- Cook the pasta following the directions on the package while preparing the salmon, drain when done.
- Using a large skillet, melt the butter over medium heat. Add the onion and saute until translucent. Add the garlic and cook for another minute
- Sitr in the flour and cook for a minute, then gradually stir the milk in and heat to near boiling.
- Gradually add the cheese to the mixture and stir until smooth.
- Add the peas and mushrooms and simmer over low heat for 5 minutes.
- Add the salmon to the skillet, coat with the sauce and cook for 2 minutes.
- Serve over pasta.
