Turkey and Prosciutto Pizza

This is a simple way to use some of that leftover Thanksgiving Turkey.   This uses store-bought pizza crust and sauce to make it even easier.

Turkey and Prosciutto Pizza

Ingredients

  • 1 cup turkey breast - leftovers (cooked) and shredded
  • 1 tablespoon balsamic vinegar
  • 1 pizza crust like Boboli Original Pizza Crust
  • 3/4 cup pasta or pizza sauce
  • 1/2 cup fontina cheese - grated
  • 1/2 red onion - medium, thinly sliced
  • 1/4 cup parmigiano-regnano cheese - grated
  • 2-3 ounces prosciutto - finely chopped

Instructions

  • Preheat oven to 425 F (or what the pizza crust package recommends)
  • Using a medium bowl, combine the turkey breast with balsamic vinegar and toss.
  • Cover the crust with pasta or pizza sauce (less is more - too much may make it soggy)
  • Cover the sauce with the fontina cheese, then top the pizza with the turkey and sliced red onion, and prosciutto
  • Sprinkle the parmigiana-regano cheese over the top and bake for 10 to 12 minutes, until the crust is golden brown and the cheese bubbles.
  • Serve warm
