Glazed Salmon

Glazed Salmon

I use a red salmon filet for this dish and a cast iron skillet.  It is a fine recipe when you don’t feel like firing up the grill.

The salmon is topped with a brown sugar mixture and cooked briefly in a cast iron skillet for a nicely browned surface, then coat the salmon with your favorite glaze and finish cooking the oven.

This dish goes well with roasted potatoes or gratin potatoes and Roasted Asparagus with Garlic and Thyme.  You’ll need to time the potatoes or asparagus so they are nearly done, then lower the oven to 300 ºF to finish off the salmon.

Ingredients

  • 1 pound salmon - filet, with skin on
  • 1 teaspoon kosher salt
  • 1 tablespoon brown sugar
  • 1/2 teaspoon cornstarch
  • 2 teaspoons olive oil
  • glaze - see notes

Instructions

  • Preheat the oven to 300 ºF.
  • Pat down the salmon with paper towel to dry them.  Then pull the pin bones from the fillet and cut it into 2 or 3 equal sized pieces.
  • In a small dish or bowl, mix the brown sugar, salt and cornstarch.
  • With the skin side of the salmon down, cover the top of the salmon with the brown sugar mixture.  Rub it in a little.
  • Using a 10 inch cast iron skillet, heat the oil over medium high heat.
  • Put the salmon into the skillet, with the flesh down (skin up) and cook for 2 minutes.  Flip the salmon so it is skin down and cook for another 2 minutes.
  • Remove the skillet from the heat and pour glaze over the top of the filets,  enough to cover them, not drown them.
  • Put the skillet of salmon into the 300 ºF oven for about 10 minutes.  Check for the last several minutes to be sure you don't overcook them.
  • Plate and serve

Notes

I usually use whatever commercial glaze I find in the refrigerator.  I always seem to get a bottle or two for Christmas.  As I experiment with home made glazes, I'll post them in Kayla's Kitchen
