Roasted Asparagus with Garlic and Thyme

This goes well with salmon or steaks.  Roast in the oven when your are using the kitchen, or use a grilling basket when using the grill.

Roasted Asparagus with Garlic and Thyme

Course: Side Dish

Ingredients

  • 1 1/2 pounds asparagus
  • 1 tablespoon olive oil - extra virgin
  • 3 cloves garlic minced
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon thyme

Instructions

  • Preheat the oven to 400 ºF
  • Drizzle about 1/3 tablespoon oil into a 13" x 9" baking dish.
  • Break off the bottoms of the asparagus and use them for compost.   Place the tops in the baking dish and drizzle with the remaining 2/3 tablespoon of oil over them.
  • Sprinkle the asparagus with the garlic, sea salt and thyme and toss to coat. 
  • Bake for about 20 minutes at 400 F, check and stir things about halfway through.

Notes

Use a grilling basket and your grill to make this when grilling steaks or salmon.
