Brussels Sprouts With Bacon

Brussels Sprouts With Bacon

Ingredients

  • 4 strips thick bacon - cut into half inch strips
  • 1 tablespoon butter
  • 1 to 1 1/2 pounds brussels sprouts - cut each head in half
  • 1 shallot - sliced (or 1/2 onion, sliced)
  • pepper to taste

Instructions

  • Using a large skillet, cook the bacon over medium-high heat until it is brown and crispy. Use a slotted spoon or spatula to transfer the bacon to a paper towel lined plate.  Leave the bacon grease in the skillet.
  • Add the butter to the skillet and melt it over medium heat.    Add the sliced shallot (or onion) and the brussels sprouts.  Add a little pepper to taste. Cook until the sprouts are golden brown, about 10 minutes.  Stir occasionally to prevent sticking and burning.  
  • Mix the bacon back into the pan and heat for another minute or two.  Serve warm.
