Banana Walnut Bread
An easy way to make great banana bread from those over-ripe bananas. This quick-bread is gone is less than a day at our home.
Banana Walnut Bread
Ingredients
- 3 ripe bananas
- 2 eggs
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup walnuts coarsely chopped
Instructions
- Preheat your oven to 350 ºF.
- Lightly grease a loaf pan with olive oil or butter.
- Using a large bowl, mash the bananas.
- Beat two eggs and add them to the bananas and mix well.
- Add the flour, baking soda, and salt to the banana mixture and mix well.
- Stir the walnuts into the mixture.
- Pour the mixture into a loaf pan and bake for 60 minutes.
- When done, remove the loaf from the pan and cool it on a wire rack.
