Sourdough Pizza Dough

We use a pizza stone on a grill (or in a very hot oven) for delicious pizza at home.

Sourdough Pizza Dough

Servings: 2 pizzas

Ingredients

Freshly fed sourdough starter

  • 1 cup sourdough starter
  • 1 1/2 cup flour
  • 1 1/2 cup water

Dough

  • 1 1/2 cups freshly fed sourdough starter
  • 1 1/2 cups white flour I use bread flour if I have it, but all purpose will do in a pinch
  • 1 teaspoon salt
  • 1 or2 tablespoons water
  • 2 tablespoons olive oil

Instructions

Feed the sourdough starter.

  • Feed your sourdough the first thing on the morning you want pizza.  You’ll have do do it the night before for a lunchtime pizza.
  • Pull out a cup or so of sourdough starter from your fridge.  
  • Put the sourdough starter in a large glass (or plastic) bowl.
  • Add the flour and water and stir it into a smooth batter.
  • Cover the bowl with plastic wrap and let it sit in a warm place for at least 4 or 5 hours (overnight if you are making a lunch pizza). 

Make the dough

  • Start making the dough about 4 hours before you want your pizza.
  • Pull 1 1/2 cups of fed sourdough starter from the large bowl and put it in another large bowl. Put the remaining starter in a plastic container and store it in the fridge. This will be the starter for future recipes.
  • Add the flour and salt to the starter and mix it with your hands until smooth.  If it seems too thick, add a tablespoon or two of water.  This is a judgement call – you’ll figure out what works for you based on the thickness of your starter and practice.
  • Add the olive oil.
  • Kneed with your hands (in the bowl) for about 10 to 15 minutes.  It will start out as a sloppy, oily mess, but will become a smooth dough in a few minutes.
  • Split the dough into 2 equally sized pieces.  
  • Put each piece into a small bowl and cover with plastic wrap. 
  • Let the dough rise for about 3 hours.
  • Sprinkle some flour (and corn meal if you want) on your working surface and roll each piece into a circle about 12 inches in diameter.
  • Let the dough sit as you heat your oven or grill
  • Put your pizza stone into your oven or grill prior to heating.  Heat to about 500 ºF.  The hotter the better.
  • When your grill or oven is ready, prepare your first pizza.
  • Brush the dough with olive oil, then add the sauce, cheese, and toppings that you want.
  • Use a pizza peel to transfer the pizza to the pizza stone in the hot grill or oven and cook for about 8 minutes.  Time will vary depending on how hot you can get your grill and the thickness of the dough – so check occasionally.
  • Use a pizza peel to take the pizza off of the stone.
  • Prepare and bake the second pizza while you have a piece of the first.
