Sour Cherry Pie
A great way to use the freshly picked cherries from your tree.
I like the vodka-based pie crust for this.
Sour Cherry Pie
Servings: 8 slices
Ingredients
- 1 pastry dough for a 9-inch, two crust pie
- 1 cup sugar
- 2 tablespoons flour
- 1/4 teaspoon salt
- 4 cups fresh sour cherries pitted!
Instructions
- Preheat the oven to 425 ºF.
- Roll out half of your pastry dough. Using a 9-inch pie pan, line the bottom with it.
- Using a large bowl, mix the sugar, flour, and salt.
- Pit the cherries.
- Add the cherries to the bowl with the sugar mixture and toss well to coat all of the cherries.
- Put the cherry mixture into the pie pan.
- Roll out the rest of the pastry dough and cover the top of the pie. Crimp the sides together. Poke holes into the top with a fork (or make small slits with a knife)
- Put the pie into the 425 ºF oven and bake for 10 minutes
- Lower the heat to 350 ºF and bake for another 30 or 40 minutes. When done the crust will be a light golden brown.
