Mini Cherry Pies
Our little cherry tree had just enough cherries for a half of a pie, so we made 2 mini pies instead!
The Vodka Pie Crust works well for this recipe.
Mini Cherry Pies
Servings: 2 5-inch pies
Ingredients
- 1 pastry dough for a 9-inch single crust pie
- 1/2 cup sugar
- 1 tablespoons flour
- 1/4 teaspoon salt
- 2 cups fresh sour cherries pitted!
Instructions
- Preheat the oven to 425 ºF.
- Split the pastry dough in half and roll out two circles. Wide enough to fill a 5 inch crock and leave about 2 inches around the sides.
- Line 2 5 inch crocks with the pastry dough.
- Using a large bowl, mix the sugar, flour, and salt.
- Pit the cherries.
- Add the cherries to the bowl with the sugar mixture and toss well to coat all of the cherries.
- Put the half of cherry mixture into each of the 5 inch crocks.
- Bring the sides together and pinch them at the top of the pie. Poke holes into the top with a fork (or make small slits with a knife)
- Put the pie into the 425 ºF oven and bake for 10 minutes.
- Lower the heat to 350 ºF and bake for another 30 or 40 minutes. When done the crust will be a light golden brown.
