Scotch Shortbread

A nice treat for your Burn’s Supper.

Scotch Shortbread

Ingredients

  • 1/2 pound butter
  • 1/2 cup fine sugar
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Instructions

  • Preheat your oven to 350 F.
  • Using a medium sized bowl, cream the butter.
  • Add the sugar to the butter gradually and beat well.
  • Using a second medium sized bowl, mix the flour, salt, and baking soda.
  • Add the flour mixture to the butter mixture and blend well.
  • Roll the dough on a lightly floured work surface.  Roll to a thickness of about 1/4 inch.
  • Cut the dough into rectangles and put them on an un-greased cookie sheet.  
  • Prick each rectangle a couple of times with a fork.
  • Bake for 20 to 25 minutes.   The shortbread should be light brown around the edges.
