Scotch Shortbread
A nice treat for your Burn’s Supper.
Scotch Shortbread
Ingredients
- 1/2 pound butter
- 1/2 cup fine sugar
- 2 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
Instructions
- Preheat your oven to 350 F.
- Using a medium sized bowl, cream the butter.
- Add the sugar to the butter gradually and beat well.
- Using a second medium sized bowl, mix the flour, salt, and baking soda.
- Add the flour mixture to the butter mixture and blend well.
- Roll the dough on a lightly floured work surface. Roll to a thickness of about 1/4 inch.
- Cut the dough into rectangles and put them on an un-greased cookie sheet.
- Prick each rectangle a couple of times with a fork.
- Bake for 20 to 25 minutes. The shortbread should be light brown around the edges.
