Pie Birds
These cute little things are used to vent a pie so that steam escapes through the bird’s mouth instead of building up inside the pie. They can help avoid drip-overs and can prevent the top crust from cracking.
A pie bird is also called a pie funnel or pie chimney.
They are especially useful for meat pies like our Steak and Guinness pie.
To use the pie bird, put the bottom crust in the pie pan, then add about half of the pie filling. Place the bird in the center of the pan, on top of the filling., then add the rest of the filling. Cut an ‘X’ in the center of the top crust, just big enough so that it can slide over the bird. Lay the crust over the bird centered on the pie and pinch the edges.
