Pasta with Garlic Sauce and Sausage
This dish is surprisingly easy and wonderfully delicious. The buttery garlic sauce makes this a wonderful comfort food, while fresh oregano and sausage make this dish far from mundane.
Pasta with Garlic Sauce and Sausage
Servings: 6 people
Ingredients
- 3/4 – 1 lb pasta, uncooked
- 4 cloves garlic
- ¾ lb sausage, suggested: fully cooked salt & pepper links
- ¼ cup butter, salted
- ¼ cup olive oil
- ¼ cup white wine
- 1 tbsp fresh oregano, finely chopped
- shredded parmesan cheese, when serving

Preparation
- Boil water and make the pasta according to the package instructions. I've used orecchetta, which takes 12 – 15 minutes in boiling water, depending if you like al dente or more cooked.
- Cut the sausage link or links in roughly ¼-inch thick slices.
- Mince the garlic.
- Finely chop the oregano leaves.
Cook the Sauce
- On the medium-low setting, heat the butter and olive oil in a sauce pan.
- When the butter is melted, add the garlic and cook until it is soft, but not browned – about one minute.
- Add sausage and oregano and bring to a simmer. Cook until the sausage is heated through. About 5 to 10 minutes. If you're using uncooked sausage, make sure it is fully cooked before serving.
Serving Suggestions
This pasta goes well with steamed broccoli and a green salad. Pour yourself a healthy glass of semi-dry white wine. (perhaps the one you put in the sauce). Siegerrebe Kabinett from Bechtel Frey pairs well.
