Fruit and Nut Granola
I like to call this my yogurt’s companion; however, you’re sure to enjoy it with dairy milk, non-dairy milks, or dry.
Fruit and Nut Granola
Servings: 9 Cups
Equipment
- 1 Baking sheet
Ingredients
- 3 cups rolled oats
- 1 cup shredded coconut
- 1 cup chopped walnuts
- 1 cup sliced almonds
- ½ cup sunflower seeds
- ¼ cup brown sugar
- ¼ teaspoon cinnamon
- ¼ cup coconut oil
- ¼ cup honey
- 2 cups dried fruit: cherries, apricots, mango, strawberries, etc., or a combination
Instructions
- Preheat oven to 250℉.
- In a large bowl, combine oats, coconut, nuts, and seeds.
- In another bowl, mix honey, brown sugar, cinnamon, and coconut oil. I find it easier to mix the coconut oil after I heat it in the microwave for about 15 seconds.
- Pour the mixture over the dry ingredients and mix thoroughly.
- Spread the mix on the baking sheet and bake for 1 hour. Stir every 15 minutes.
- Take out of the oven and let the granola cool. After it is cooled, mix in the dry fruit.
Notes
Store in a sealed container, such as a mason jar. This shelf stable food can be stored at room temperature for a couple weeks, if you don’t finish it before then.
Substitute molasses for the honey for a richer flavor.
Add some flax seed or other seeds you favor.
