Basic Tart Pastry
This is a simple, buttery crust. It produces a crisp crust for tarts.

Ingredients

cup
all purpose flour
1/4
teaspoon
salt
6
tablespoons
butter
cold, cut into small pieces
1
egg yolk
2
tablespoons
cold water
Instructions
Using a medium sized bowl, mix the flour and salt.
Cut in the butter with a pastry blender until the mixture has the consistency of small peas.
Using a small bowl, whisk the water and egg yolk together
Add the water and egg mixture to the flour mixture and mix or blend until the dough can be pressed together and hold into a ball.
Form the pastry into a ball, wrap with plastic wrap and refrigerate for at least a half hour.
Roll the dough our and press it into the pie pan.
Bake according to your tart recipe or follow the baking directions below:
Baking
Preheat your oven to 425 ºF.
Prick the bottom with a fork.
Bake unfilled for 10 or 12 minutes.
