Ingredients

pastry dough for a 9-inch single crust pie
1/2
cup
sugar
1
tablespoons
flour
1/4
teaspoon
salt

fresh sour cherries pitted!
Instructions
Preheat the oven to 425 ºF.
Split the pastry dough in half and roll out two circles. Wide enough to fill a 5 inch crock and leave about 2 inches around the sides.
Line 2 5 inch crocks with the pastry dough.
Using a large bowl, mix the sugar, flour, and salt.
Pit the cherries.
Add the cherries to the bowl with the sugar mixture and toss well to coat all of the cherries.
Put the half of cherry mixture into each of the 5 inch crocks.
Bring the sides together and pinch them at the top of the pie. Poke holes into the top with a fork (or make small slits with a knife)
Put the pie into the 425 ºF oven and bake for 10 minutes.
Lower the heat to 350 ºF and bake for another 30 or 40 minutes. When done the crust will be a light golden brown.
