¾lbsausage, suggested: fully cooked salt & pepper links
¼cupbutter,salted
¼cupolive oil
¼cupwhite wine
1tbspfresh oregano,finely chopped
shredded parmesan cheese, when serving
Instructions
Preparation
Boil water and make the pasta according to the package instructions. I've used orecchetta, which takes 12 - 15 minutes in boiling water, depending if you like al dente or more cooked.
Cut the sausage link or links in roughly ¼-inch thick slices.
Mince the garlic.
Finely chop the oregano leaves.
Cook the Sauce
On the medium-low setting, heat the butter and olive oil in a sauce pan.
When the butter is melted, add the garlic and cook until it is soft, but not browned - about one minute.
Add sausage and oregano and bring to a simmer. Cook until the sausage is heated through. About 5 to 10 minutes. If you're using uncooked sausage, make sure it is fully cooked before serving.
Serving
Pour the sauce over the cooked pasta and mix thoroughly.
Serve with shredded parmesan cheese. Shredded cheese seems to impart more flavor than grated and this is why shredded is recommended.
