Scotch Shortbread
Ingredients

butter

cup
fine sugar

cups
flour

teaspoon
salt
1/2
teaspoon
baking soda
Instructions
Preheat your oven to 350 F.
Using a medium sized bowl, cream the butter.
Add the sugar to the butter gradually and beat well.
Using a second medium sized bowl, mix the flour, salt, and baking soda.
Add the flour mixture to the butter mixture and blend well.
Roll the dough on a lightly floured work surface. Roll to a thickness of about 1/4 inch.
Cut the dough into rectangles and put them on an un-greased cookie sheet.
Prick each rectangle a couple of times with a fork.
Bake for 20 to 25 minutes. The shortbread should be light brown around the edges.
